The parcel
Coming from vines in the commune Boncourt le Bois, this cuvée is composed of Aligoté grape varieties (100%) on clay-limestone soil and a South-East exposure. Vineyard: 40 years on average. Grape variety: Aligoté. Culture: Environmentally friendly and sustainable.
Winemaking & ageing
Whole-bunch pressing, followed by light settling and immediate transfer to Burgundy barrels. Alcoholic fermentation with indigenous yeasts, followed by malolactic fermentation, in Burgundy barrels. Ageing: 5 months on the lees in Burgundy barrels, under reductive conditions, without racking, with lees stirring and no SO2. Second fermentation in the bottle, with bottles stacked horizontally, from February 2021. Traditional method.
Tasting notes
It is elegant, floral and salty. This green-gold colored wine has a lot of freshness and great flavor.
