Grape variety: Pinot noir fine type, quality rootstock 161-49. Culture: Sustainable and environmentally friendly culture.
Winemaking & ageing
Sorted whole bunches, without SO2, with punch-downs twice a day for 2.5 weeks. Alcoholic fermentation with indigenous yeasts, without artificial temperature control. Malolactic fermentation in Burgundy barrels. Ageing: 17 months on the lees, under reductive conditions, without racking, with lees stirring and no SO2.
Tasting notes
Dense and structured. Its fruity notes of liquorice and sandalwood give it great depth and complexity. A few years in the bottle will allow it to refine and have a more vertical silhouette.
